Sweet Potato Mash with Plantain Chip Crust

For our final dish for this Thanksgiving extravaganza I present to you this sweet, savory, and crunchy sweet potato mash with a plantain chip crust, baked to perfection! I ditched the same old boring marshmallow toppings for some crushed plantain chips to make this sweet potato mash. It gives it a nice little crunch and adds slightly more flavor. I am not a huge fan of sweet foods for dinner, so I opted to go for something with more flavor for this sweet potato mash recipe. 

How do you make a sweet potato mash more savory than sweet? 

The answer is easy… SAZON! I love to add garlic, green onions, salt, pepper, and butter to my sweet potatoes to give them that hint of flavor. Also, the crusted top layer is important as well. You can either use sweet plantain chips or regular plantain chips depending on which flavor you want. Sweet plantains will give a little more sweetness and bitterness to the dish, whereas regular plantains will give it a saltier taste.

How do you make this recipe? 

This recipe is pretty straightforward and easy to make. Also, it doesn’t take too long to make and the flavor is delicious. 

  • Make your sweet potatoes: Wash, peel, and chop your sweet potatoes into 1-2 inch cubes. After, toss them into a pot and add enough water to cover them. Place on high heat and bring the water to a boil. Allow the potatoes to boil for about 10 minutes until they are soft enough to pierce with a fork. 
  • Add the ingredients: Once the sweet potatoes are done, drain the water from the pot and add the butter, salt, pepper, garlic, green onions, and greek yogurt. Mash the potatoes with the masher and mix to incorporate all the flavors. 
  • Make the plantain crumbs: To make the plantain crumbs, take either 2 cups of sweet plantains or regular plantains and place in a food processor. Add melted butter and pulse the food processor to crush the chips into fine crumbs. 
  • Baking your sweet potato mash: Transfer the sweet potato mash to an oven safe casserole dish. Lay your plantain crumbs on top. Place in a preheated oven at 350F, for about 10-15 minutes until there is a nice golden shine to the crumbs on top. Remove and serve!

Ingredients

  • 2.5 lbs of sweet potato
  • ½ cup of greek yogurt
  • 7 tbsp of butter
  • ½ tsp of salt
  • tsp of black pepper
  • 1 cup of green onions diced
  • 1 garlic clove minced
  • 2 cups of sweet plantain or regular plantain chips

Instructions

  • Preheat your oven to 350F.

  • In a food processor, add the plantain chips and remaining 2 tablespoons of butter. Pulse the food processor to crush the chips into fine crumbs.
  • Transfer the sweet potato mash to an oven safe casserole dish. Lay your plantain crumbs on top. Place in a preheated oven at 350F, for about 10-15 minutes until there is a nice golden shine to the crumbs on top. Remove and serve!
