Preheat your oven to 350F.
Wash, peel, and chop your sweet potatoes into 1-2 inch cubes. After, toss them into a pot and add enough water to cover them. Place on high heat and bring the water to a boil. Allow the potatoes to boil for about 10 minutes until they are soft enough to pierce with a fork.
Once the sweet potatoes are done, drain the water from the pot and then add 5 tablespoons of butter, salt, pepper, garlic, green onions, and greek yogurt. Mash the potatoes with the masher and mix to incorporate all the flavors.
In a food processor, add the plantain chips and remaining 2 tablespoons of butter. Pulse the food processor to crush the chips into fine crumbs.
Transfer the sweet potato mash to an oven safe casserole dish. Lay your plantain crumbs on top. Place in a preheated oven at 350F, for about 10-15 minutes until there is a nice golden shine to the crumbs on top. Remove and serve!
