Sweet Potato Mash with Plantain Chip Crust

Ingredients

  • 2.5 lbs of sweet potato
  • ½ cup of greek yogurt
  • 7 tbsp of butter
  • ½ tsp of salt
  • tsp of black pepper
  • 1 cup of green onions diced
  • 1 garlic clove minced
  • 2 cups of sweet plantain or regular plantain chips

Instructions

  • Preheat your oven to 350F.
  • Wash, peel, and chop your sweet potatoes into 1-2 inch cubes. After, toss them into a pot and add enough water to cover them. Place on high heat and bring the water to a boil. Allow the potatoes to boil for about 10 minutes until they are soft enough to pierce with a fork.
  • Once the sweet potatoes are done, drain the water from the pot and then add 5 tablespoons of butter, salt, pepper, garlic, green onions, and greek yogurt. Mash the potatoes with the masher and mix to incorporate all the flavors.
  • In a food processor, add the plantain chips and remaining 2 tablespoons of butter. Pulse the food processor to crush the chips into fine crumbs.
  • Transfer the sweet potato mash to an oven safe casserole dish. Lay your plantain crumbs on top. Place in a preheated oven at 350F, for about 10-15 minutes until there is a nice golden shine to the crumbs on top. Remove and serve!
