This Sweet Plantain Bread with Coconut and Chocolate Chips is my way to jump on this banana bread craze but to be honest I am not the biggest fan of bananas. What I am a huge fan of is sweet plantains. So, I decided to change things up from the norm and add my own Cuban flare to a banana bread, by making it with sweet plantains, coconut, and chocolate chips. AND let me tell you that this concoction worked out perfectly and is extremely delicious. 

This bread goes perfectly with your morning cup of coffee or at night when you have to satisfy that sweet tooth. My favorite part of this recipe is the sweet plantain crumbs that top off the bread, alongside the coconut flakes and chocolate chips. 

Sweet Plantain Bread

How do you make sweet plantain bread? 

First, start by preheating your oven to 325F. After, peel the ripe plantains and mash them. I typically use about two plantains to get a cup and a half worth. Add the egg, vanilla extract, butter, and brown sugar and stir together. Add the chocolate chips and coconut after and mix. On a separate bowl, sift the flour, baking powder, and baking soda. Slowly combine it to your plantain mixture while mixing it simultaneously. 

Oil a bread pan and pour the sweet plantain bread mixture in it and smooth it out. I love to top my sweet plantain bread with coconut crumbs, chocolate chips and the best thing ever, some sweet plantain chips to give it some more texture. Place it in the oven for about an hour, remove and let it cool. And that’s basically it! Easy peasy. 

Next time you head to grab those bananas for your banana bread, drop them and go for the sweet plantains.

Ingredients

  • cup Sweet plantains smashed
  • 1 cup Brown Sugar
  • 1 Large Egg
  • 1 stick Butter melted
  • 1 tsp Vanilla extract
  • 1 cup Semi-sweet chocolate chips
  • 1 cup Coconut
  • 2 cups Allpurpose flour
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • ¼ cup Sweet plantain chip crumbs

Instructions

  • Pre-heat your oven to 325°F.
  • Peel and smash your sweet plantains and add to a bowl. Add the egg, butter, brown sugar, and vanilla extract. Stir to combine. After add the semi-sweet chocolate chips and coconut to the mix and combine.
  • In a seperate bowl, sift the flour, baking powder and baking soda together. Slowly add it to your sweet plantain mixture while contionusly stirring.
  • Coat a bread pan with non-stick oil. Add your mixture to the pan. Top off with your sweet plantain chip crumbs, semi-sweet chocolate chips and coconut.
  • Place in the oven for 45 minutes. After 45 minutes, cover with alumninum foil, and cook for another 10 minutes, until a knife comes out clean.
  • Serve and enjoy!
