Pre-heat your oven to 325°F.
Peel and smash your sweet plantains and add to a bowl. Add the egg, butter, brown sugar, and vanilla extract. Stir to combine. After add the semi-sweet chocolate chips and coconut to the mix and combine.
In a seperate bowl, sift the flour, baking powder and baking soda together. Slowly add it to your sweet plantain mixture while contionusly stirring.
Coat a bread pan with non-stick oil. Add your mixture to the pan. Top off with your sweet plantain chip crumbs, semi-sweet chocolate chips and coconut.
Place in the oven for 45 minutes. After 45 minutes, cover with alumninum foil, and cook for another 10 minutes, until a knife comes out clean.
