White chocolate macadamia cookies are one of my favorite cookies ever. I don’t know if you have heard of Insomnia cookies, but they are big in New York, and we have one a few blocks away. It is always a go to spot on those late-night outs or even better you can have them delivered straight to your apartment, which I may have done once or twice this month. Let me tell you that their white chocolate macadamia cookies are to die for and they are always served hot which makes them even better! Anyway, since I am just as equally as obsessed with guava, I decided to combine the two and make these Guava & White Chocolate Macadamia Cookies!
How many cookies does this recipe make?
If you use this recipe, you should be able to make about 48 Guava & White Chocolate Macadamia Cookies. If this makes too many, I suggest cutting the recipe in half, but let us be honest, is there such thing as too many cookies?!?!
How long do I bake the Guava & White Chocolate Macadamia Cookies?
I bake these cookies for 10 minutes. To me, this is the perfect amount of time. It allows the cookie to cook thoroughly, but they still come out soft and gooey which is what I love. If you like crispier cookies, I would leave them in the oven for about 12-14 minutes but be careful not to burn them.
How do I get the guava and white chocolate to stick out on the top?
When I made my first batch of cookies using this recipe, I noticed that the actual dough encompassed the guava, white chocolate chips and macadamia nuts when it cooked. On my second batch, I decided that after I scoop my cookie dough onto the baking tray, I would top each cookie dough with pieces of guava and white chocolate chips. This allowed for the cookie to come out just perfect!

Ingredients
- 2½ cup All-purpose flour
- 2 tsp Baking powder
- ½ tsp Salt
- 1 cup Light brown sugar
- ½ cup White sugar
- 1 cup Butter two sticks melted and cooled
- 2 Eggs room temperature
- 1 tsp Vanilla extract
- 1¼ cup Chopped macadamia nuts
- 1¼ cup White chocolate chips
- 1¼ cup Guava paste diced
Instructions
- Preheat the oven to 350°F.
- In a bowl, combine the all-purpose flour, baking powder, and salt. Stir to combine.
- Melt the sticks of butter in the microwave for about 1 minute. Allow to cool for 5 minutes so that it's not too hot when you combine it with the ingredients.
- In a separate bowl, combine the light brown sugar, white sugar, eggs, and vanilla extract. Add the cooled butter. Stir to combine.
- Slowly add the dry ingredients into the bowl with the light brown sugar, white sugar, eggs, vanilla extract, and butter.
- Once fully combined, add a cup of chopped macadamia nuts, white chocolate chips, and diced guava paste to the mixture and gently fold to combine with dough.
- Scoop the cookie dough out onto a baking try and place about 2-3 inches apart. Top each cookie with the remaining ¼ cup of chopped macadamia nuts, white chocolate chips, and diced guava paste.
- Place in the oven and cook for 10 minutes. Remove a little cool for about 5 minutes and enjoy!

Oh my gosh these are amazing!! I cheated a little because I couldn’t find Macadamia nuts here in Japan so I just used the pre macadamia cookie mix and added guava- still sooo good. My husbands response : “I hate that I tasted this because now I want you to make them everyday”. Yup, that good.
As a professional baker, I am SUPER picky with my cookies. This one hit every mark. Make sure you have plenty of people to share with or you will 100% eat the entire batch yourself (yes, they are that good).
These are AMAZING. Super unique, tasty and delicious. Would highly recommend making these! I used mini white chocolate chips and it still worked great. They’re a crowd pleaser 🙂
