Guava & White Chocolate Macadamia Cookies

Ingredients

  • cup All-purpose flour
  • 2 tsp Baking powder
  • ½ tsp Salt
  • 1 cup Light brown sugar
  • ½ cup White sugar
  • 1 cup Butter two sticks melted and cooled
  • 2 Eggs room temperature
  • 1 tsp Vanilla extract
  • cup Chopped macadamia nuts
  • cup White chocolate chips
  • cup Guava paste diced

Instructions

  • Preheat the oven to 350°F.
  • In a bowl, combine the all-purpose flour, baking powder, and salt. Stir to combine.
  • Melt the sticks of butter in the microwave for about 1 minute. Allow to cool for 5 minutes so that it's not too hot when you combine it with the ingredients.
  • In a separate bowl, combine the light brown sugar, white sugar, eggs, and vanilla extract. Add the cooled butter. Stir to combine.
  • Slowly add the dry ingredients into the bowl with the light brown sugar, white sugar, eggs, vanilla extract, and butter. 
  • Once fully combined, add a cup of chopped macadamia nuts, white chocolate chips, and diced guava paste to the mixture and gently fold to combine with dough. 
  • Scoop the cookie dough out onto a baking try and place about 2-3 inches apart. Top each cookie with the remaining ¼ cup of chopped macadamia nuts, white chocolate chips, and diced guava paste.
  • Place in the oven and cook for 10 minutes. Remove a little cool for about 5 minutes and enjoy!
