For The Love Of Guava Pudding

Love guava as much as I do?! Then you have to try this guava pudding out! My wife is obsessed with it and actually came up with this idea. It took a few tries to make but this recipe for guava pudding came out so good!! I think one of my goals in life is to add guava to every recipe.

This recipe honestly took me back to my middle school days when I would eat vanilla pudding for lunch as dessert. But this is more sophisticated since it is homemade, right? The hardest part about this recipe was getting rid of the lumps of corn starch, but with enough straining it worked!

How do you make guava pudding?

To make the guava pudding, combine the milk, guava paste, vanilla, sugar, and cinnamon into a pot and bring to a boil. Then, on the side, dissolve the corn starch into a small amount of milk. Once the milk is boiling, add the corn starch and milk into the boiled milk through a strainer. Stir it and then strain it back into a storage container and put it to cool in the fridge. When you are ready to serve it, crumble some Maria crackers on top to give it a nice final touch!

Why do you strain the corn starch so much?

I like to strain the corn starch as much as possible so that I don’t have clumps of corns starch in the pudding. You will see that if you don’t strain the corn starch it will become clumpy every time that you add it to anything wet. Also, it’s important to make sure that you keep the pudding boiling once you add the corn starch mixture so that you may get rid of the taste from the corn starch.

Ingredients

  • 2 ⅓ cup Whole Milk
  • 5 tbsp Guava Paste about 7oz
  • 1 tsp Vanilla extract
  • 2 Egg yolks
  • cup Sugar
  • 2 Cinnamon sticks
  • 3 tbsp Corn starch
  • Maria Crackers crumbled

Instructions

  • In a medium size pot, combine 2 cups of whole milk, egg yolk, guava paste (chopped), vanilla extract, sugar, and cinnamon sticks. Bring to a boil over medium heat. Whisk frequently to help dissolve the guava and prevent the milk from sticking. About 5-10 minutes. 
  • In a measuring cup, add the remaining 1/3 of whole milk and sift the corn starch into it one tablespoon at a time, stirring in between tablespoons. 
  • Once the milk begins to boil and the guava is dissolved. Stir the milk and cornstarch mix one last time and then strain it into the hot milk. Mix to combine. Allow the mixture to boil for 1-2 more mintues. You will notice the mixture will become thick. 
  • Once combined and the pudding is thicker, strain the pudding into a storage container. Place in the fridge to cool.
  • When ready to serve, sprinkle with Maria cracker crumbs and enjoy!!
