Arroz Con Pollo Fritters

I got the idea of making Arroz Con Pollo fritters from one of my favorite Cuban fusion restaurants in Miami, FINKA Table & Tap. It has always been one of my go to restaurants whenever I visit South Florida because their food is just so damn good! From the croqueta pizza, to their Cuban old fashion there is nothing on the menu that won’t make your mouth water. 

Are these fritters hard to make? 

They are quite simple to make and even easier in the air fryer. The most difficult part about making this is making the arroz con pollo, so I like to make them with any left-over arroz con pollo. The remaining part is easy. All you have to do is shred the chicken, mix some garlic aioli in it, and bread them. They take about 10 minutes to fry in the air fryer, so they are done pretty quick.

How do I make Arroz Con Pollo Fritters?

You are going to need two cups of arroz con pollo to make about 10 fritters. First thing you have to do is to shred and cut the chicken into pieces to make them bite size. Then, you are going to mince three garlic cloves and mix it with three tablespoons of mayonnaise. Mix this with the two cups of arroz con pollo.

After, scramble two eggs in a bowl and place 1 cup of flour on a plate and on another plate, add your plantain crumbs or bread crumbs. To form the fritters, grab about 2 tablespoons of your arroz con pollo and form them into a ball. Pass the ball through the flour, then through the egg wash and finally through your plantain/bread crumbs. 

To cook them in the air fryer, heat the air fryer to 375F, spray the arroz con pollo fritter with cooking oil and cook in the air fryer for 10 minutes, flipping halfway. Ingredients

  • 2 cups Arroz Con Pollo Recipe on blog
  • 3 cloves Garlic
  • 3 tlbs Mayonnaise 
  • 2 3oz Mariquita plantain crumbs may substitute with bread crumbs
  • 1 cup Flour
  • 2 Eggs beaten
  • Spray cooking oil 

Instructions

  • Shred the chicken in the arroz con pollo into tiny pieces. 
  • Mince the garlic cloves and combine it with the mayonnaise to make a garlic aioli. Add the aioli to the arroz con pollo and mix. 
  • Scramble two eggs in a bowl and place 1 cup of flour on a plate and on another plate, add the plantain crumbs (you may substitute for breadcrumbs).
  • Grab about 2 tablespoons of your arroz con pollo and form them into a ball. Pass the ball through the flour, then through the egg wash and finally through your plantain crumbs. Set aside. 
  • Heat the air fryer to 375F, spray the arroz con pollo fritter with cooking oil and cook in the air fryer for 10 minutes, flipping half way. Serve with my crack sauce and enjoy!!
