Shred the chicken in the arroz con pollo into tiny pieces.
Mince the garlic cloves and combine it with the mayonnaise to make a garlic aioli. Add the aioli to the arroz con pollo and mix.
Scramble two eggs in a bowl and place 1 cup of flour on a plate and on another plate, add the plantain crumbs (you may substitute for breadcrumbs).
Grab about 2 tablespoons of your arroz con pollo and form them into a ball. Pass the ball through the flour, then through the egg wash and finally through your plantain crumbs. Set aside.
Heat the air fryer to 375F, spray the arroz con pollo fritter with cooking oil and cook in the air fryer for 10 minutes, flipping half way. Serve with my crack sauce and enjoy!!
