Ever had a tostada cubana? How about a Tostada Cubana Preparada?!
I got this idea while visiting my parents in Miami. Since we have so many Cuban bakeries in Miami, a Cuban tostada is a go to breakfast for most of us. But then I thought to myself ‘I love avocado’ and what would be better than an avocado toast? A tostada lathered in butter top with avocado, bacon and a fried egg. Which led me to create a TOSTADA PREPARADA!
Every breakfast in Cuban restaurants in Miami always starts with a cup of café con leche (Cuban coffee and milk) and a tostada cubana to dip into your café con leche. For those who don’t know what a tostada cubana is, it is a slice of Cuban bread, covered with butter on the top, bottom and in the inside, which is then pressed down and heated in a sandwich press. This will toast the outside (hence tostada) and melt the butter on the inside, leaving you with a crispy, flat, buttery toast. Dip it in your coffee, take a bite and the tostada literally melts in your mouth. It is the perfect combination of savory and sweet. You know the song “the best part of waking up is Folgers in your cup.” Well it really should be “the best part of waking up is a tostada in your cup.”
So how do you make a Tostada Cubana Preparada?
First thing you are going to want to make is your bacon. I like to cook the bacon in the oven, so it frees the stove to make the eggs. Preheat your oven to 400F, and place a line baking sheet with aluminum foil. Then, you are going to lay the strips of bacon on the sheet and cook for about 15 minutes, until they are crispy. Meanwhile, peel your avocados, and smash them in a bowl, adding the salt, pepper, and lime and mix. After, generously coat a pan with oil and heat over low-medium heat. Place one egg at time into the pan. Let cook for about 1 minute, and then place a cover on the pan and let it cook for another minute or two until the white area of the eggs are cooked. Remove and place on a paper towel lined plate.
Finally, I like to make the tostada last, just so that it is hot and crispy. Slice a piece of Cuban bread in half and coat the outside and inside of the slices with butter. Place in a sandwich press for about 3-5 minutes, until the bread is flattened, crispy and the butter is melted. After, start stacking your tostada preparada. First, spread out the avocado smash, then the bacon and finally the egg. Sprinkle with salt and pepper and enjoy!Let me know what you think in the comments below!
