Guava Cinnamon Rolls

Every year around this time my family would take a little trip to Homestead, Florida to eat some THE BEST cinnamon rolls from the Knaus Berry Farm. Since we cannot make it down to Knaus Berry Farm this year, I created this delicious guava cinnamon rolls with a cream cheese icing to go on top. I think this is honestly one of my greatest creations. When they first come out of the oven, they are nice and hot, and then adding the delicious cream cheese icing on top and it melts just the right amount of icing before taking the most perfect bite. You have to try them!

How do you make these delicious Guava Cinnamon Rolls?

The first thing you have to do is to make the dough (which is the most fun part). I don’t have a stand mixer in New York due to the limited space in the apartment, but if you have one with a dough hook it will be a little easier, but a lot less fun.

To make the dough, you mix the warm milk, instant dry yeast, salt, cinnamon, vanilla, sugar, and butter. After, you can either switch to the dough hook or mix by hand, you slowly start adding the flour until the dough forms. Here you can either mix with a dough hook for about five to seven minutes or either knead the dough by hand for about 15 minutes, until the dough forms. Place the dough in a bowl and cover it with a warm wet towel and let it sit for one hour or until it doubles in size.

Making the Guava Cinnamon and Cinnamon Brown Sugar Filling

When the hour is almost up, start making the filling. First you are going to mix the light brown sugar, melted butter, and cinnamon in one bowl. Then you are going to add the guava into a medium size pot, and melt over medium-low heat. Once the guava is melted you are going to add the cinnamon and mix. Allow the guava to cool for a few minutes.

Forming your Rolls

Once the dough has doubled in size and the fillings are done, you are going to form your guava cinnamon rolls. Lightly sprinkle a work surface with flour. Place your dough on top and roll it out to form a 12inx24in rectangle. Spread the melted guava on top and then add the cinnamon brown butter mixture on top. Roll the dough, so that it forms a 24in log. Cut the roll with a sharp knife to create 12 rolls. Transfer the rolls to a greased baking dish, cover with a warm towel, and let them rise for another 30 minutes.

Baking your cinnamon rolls to perfection

Now it’s time to bake them! Pre-heat your oven to 350 degrees F and place your guava cinnamon rolls inside. Bake for about 20-24 minutes, until they are golden brown on top. While they are in the oven make your cream cheese icing by combining the cream cheese, powder sugar, vanilla, and butter. Once the rolls are done, allow them too cool for five to ten minutes and then glaze with the cream cheese icing.

Ingredients

Cinnamon Rolls Dough

  • cups All purpose flour
  • 1 cup Milk Warm ~ 105-115°F (about 1-1.5 minutes in microwave)
  • tsp Dry active yeast
  • ½ cup Sugar
  • cup Butter melted
  • 2 Eggs
  • 1 tsp Salt
  • 1 tsp Cinnamon
  • 1 tsp Vanilla extract

Cinnamon Brown Sugar Filling

  • 1 cup Light Brown Sugar
  • 3 tlbs Butter melted
  • 1 tlbs Cinnamon

Guava Cinnamon Filling

  • 12 tlbs Guava paste
  • 1 tlbs Cinnamon

Cream Cheese Icing

  • 1 8oz Cream cheese softened
  • 3 tlbs Butter melted
  • 1 tsp Vanilla extract
  • 4 cups Powdered sugar

Instructions

Guava Cinnamon Roll Dough

  • Pour the warm milk (~105-115F) in the bowl of a stand mixer or a regular bowl and sprinkle the yeast overtop. Allow it to sit for about five minutes, so that the yeast becomes active.
  • Add the eggs, butter, salt, cinnamon, vanilla, and sugar. Mix to combine.
  • Slowly add the flour to the mixture (about 1 cup at a time). Only use 4cups and save the other 1/2 cup on the side. Scrape the sides of the bowl as you go along to make sure the flour is being well combined.
  • At this point, switch to the dough hook if you have one, or lightly sprinkle a work area with flour and place your dough on it. Knead the dough with the hook for 5-7 minutes or by hand for 15 minutes. If the dough is still too sticky and not forming, add the remaining half a cup of flour a tablespoon at a time. You want the dough to be elastic and smooth. It should still be sticky enough that it sticks to the sides of bowl or your hands, but not sticky enough that when you unstick it, there are chunks of dough on the side of the bowl or on your hands.
  • In a separate large bowl, spray with cooking spray and transfer the dough into the bowl. Cover the bowl with a wet warm towel and let the dough rise for an hour so that it doubles in size.
  • While the dough is almost done rising, prepare the brown butter cinnamon and guava filling.

  • In a bowl, combine the melted butter, brown sugar, and cinnamon, mixing until well combined. Set aside.

Guava Cinnamon Filling

  • In a medium pot, add the guava and melt over medium-low heat. Once melted, add the cinnamon and stir to combine. Set aside and allow it to cool for about five minutes, to allow it to slightly thicken.Don’t allow it to cool too much because you will not be able to spread it if it’s too firm.

Forming Your Rolls

  • Once the dough is done rising. Sprinkle a work area with flour and roll it into a 24×12" rectangle.
  • Evenly spread the guava cinnamon mixture on top of the dough. After sprinkle the brown sugar mixture on top of the guava evenly.
  • Starting on the long end, roll the dough up tightly to form a 24” log. Cut into 12 slices using a sharp knife and place in a greased baking dish.
  • Cover the baking dish with a warm wet towel and allow the dough to rise for another 30 minutes.
  • While the dough is rising, pre-heat the oven to 350degrees F.

Cooking The Guava Cinnamon Roll

  • After the 30 minutes, place the rolls in the oven and bake for 20-24minutes, until they are golden brown on top. Remove and allow to cool for about five to ten minutes, prior to placing the icing on top.

Cream Cheese Icing

  • While the rolls are cooling, prepare the cream cheese icing by combining the softened cream cheese, melted butter, vanilla extract, and powdered sugar. Mix until it is well combined, and you have no more powder sugar clumps in the bowl.
  • Once the guava cinnamon rolls are done cooling, add the cream cheese icing on top and enjoy!
