For The Love Of Shrimp Tacos

Happy Cinco de Mayo everyone!! To finish off my Mexican fiesta run, I would like to share these delicious shrimp tacos on Taco Tuesday! I love shrimp tacos and they are extremely fast and easy to make. When I am running short of time I use fajita seasoning from Whole Foods, but the blend of spices in this recipe is so much better. 

I like my tacos slightly spicy so if you want less of a kick, I suggest adding a little less seasoning. I also add a lot of toppings. I love to make fajitas, guac, and salsa for the topping. And I finish them off with some cheese and sour cream. But the best thing about having tacos is that whatever you want to put in it, is completely up to you!

Ingredients

Seasoning

  • tlbs Chili powder
  • 1 tlbs Onion powder
  • 1 tlbs Garlic powder
  • 1 tsp Salt
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 1 tsp Oregano
  • ½ tsp Black Pepper
  • ½ tsp Cayenne pepper

Filling

  • 2 lbs Shrimp
  • 1 Onion
  • 1 Red pepper
  • 1 Yellow pepper
  • Salsa
  • Guacamole recipe in blog
  • Cooked Rice optional
  • Sour cream
  • 12 Taco shells soft or hard

Instructions

  • Combine and mix all spices in a bowl. 
  • Remove the tail from shrimp and place in a bowl. Season the shrimp with 2 tbs. of seasoning and squeeze one lime and mix well. 
  • Slice the onion, red pepper and yellow pepper. Season with 1 tbs. of seasoning and mix.
  • Heat a pan on high heat. Once hot, add the shrimp. Stirring occasionally, cook for about 4-5 minutes, until the shrimp is totally pink, and you no longer see any gray parts. 3 minutes until cooking, squeeze one lime over shrimp. 
  • To cook the fajitas, place the seasoned onions and peppers in a pot. Cook over high heat for about 4-5 minutes, until they are soft, but with a slight crunch. 
  • Heat taco shells in the oven as directed by the brand. 
  • Once done, begin to layer your tacos with all the toppings you can dream of. Enjoy!
