With the heat ramping up outside and trust me I welcome it with open arms after these long winters, I wanted to make something a little more refreshing. So, I turned to some seafood pasta. This recipe is easy to make and healthy too! It takes less than 30 minutes so it is perfect for when you are in a pinch.
For this recipe, I used a mixture of shrimp, scallops, and calamari which came in a one-pound bag from trader joes. You can also buy the ingredients separate as well.
How do you make seafood pasta?
First, to get your pot of water boiling to make your pasta, believe it or not this is what is going to take the longest! Once that is on the stove, dice up your onions and garlic. Sautee them in a pan for about five minutes, until the onions become soft and translucent.
Once this is done, add your diced tomatoes from a can and all the spices to the pan. Bring this to a boil and then lower the heat to a simmer. At this time, you are going to add your seafood into the sauce. Cover it with a lid and allow it to cook for about 5 minutes. Remove the lid and make sure the seafood is cooked through. Turn off the heat and set aside. While you are doing this, don’t forget to make your pasta!
After your pasta is done cooking, drain the water and add it to your sauce, tossing it to combine all the ingredients.
How long should I cook the seafood for?
Most of the seafood cooks at different rates, so feel free to add them one by one if you wish. You can also combine it all together and cook them for about 4- 5 minutes which is slightly the average of all of them:
Clams: 4-6 minutes
Shrimp: 4-5 minutes
Scallops: 3-4 minutes
Mussels: 4 minutes
Calamari: 3-5 minutes
Ingredients
- 1½ lb Seafood Mix of shrimp, scallops, mussles, clams, and/or calamari
- 1 cup Onion diced
- 4 cloves Garlic diced
- 2 tbsp Olive oil
- 28 oz Diced tomato from a can
- 1 tsp Salt
- 1 tsp Red pepper flakes if you do not like spicy food, I recommend using ½ tsp
- ½ tsp Oregano
- ¼ tsp Black pepper
- ½ lb Spaghetti
- Parmesan cheese optional
Instructions
- Fill a pot with water and bring to a boil. Make the pasta as directed by the instructions on the packaging.
- Dice your onions and garlic. Heat up your olive oil in a pan over medium-high heat. Once hot, add the diced onions and garlic and cook for about 5 minutes, until the onions become soft and translucent.
- Add the can of diced tomatoes, salt, red pepper flakes, oregano, black pepper, stir together and bring to a boil. Once boiling, add your seafood, reduce heat to medium and cover. Cook for about 4-5 minutes, until the seafood is cooked through. Turn off the stove after it’s done.
- Drain the water from your pasta and combine it with the sauce. Stir together.
