For The Love Of Garlic Aioli

Garlic aioli must be one of the most delicious dips there is out there. I always thought this was an extremely complicated recipe and required a lot of work, but after some research and trial and error, the one I created here is extremely simple and can be whipped up in a flash for any last minute get togethers.

This recipe was inspired by one of my favorite restaurants in New York, Café Habana. And as the name implies you are probably thinking that they serve great Cuban food. Well, I hate to break it to you but it’s slightly misleading. See, Café Habana is a Mexican/Cuban fusion place with more emphasis on the Mexican side. But I will say, their food is off the chain! They serve guacamole with tostones (fried flattened out plantains) that are crispy on the outside and soft and smushy in the inside. Their tostones are fried to perfection. They also make a bomb Mexican street corn and their lechon asado (marinated pork) is pretty killer too. If you are ever in New York I highly recommend trying this place out.

The base of any aioli dip is the mayonnaise and to be quite honest, I am not a big fan of mayonnaise alone. But combine it with other ingredients and it is quite delicious. I’m not sure why but whenever I think of mayonnaise, I think of the scene from Date Movie where they pimp out the main actress. For those of you who haven’t seen it, it’s a really funny movie, but in this scene, they are trying to “pimp” her out like they do to the cars from the old MTV show “Pimp My Ride.” Anyhow, they start pumping out all the fat in her and place it in a jar labeled mayonnaise. Pretty gross I know, but honestly if that is how mayonnaise was really made, they can lipo all my fat away and put in a jar for sale, cause god this aioli is fire!!

I love to serve this aioli dip with either mariquitas (plantain chips) or tostones, but most of my family loves it with tostones, so I typically serve it with that. You can honestly put this aioli on any meat or chicken as a sauce and I promise it won’t disappoint.
