For The Love Of Coconut Macaroons

My mom has been making coconut macaroons since I can remember. She would always make them with my sister growing up and if I remember correctly, my sister started making them all the time. Growing up she would always make these coconut macaroons and would call them coquitos. So to me coquitos were always these little macaroons but in reality coquito is a thick rum drink made with coconut milk that’s typically made during the holidays. So the first time that someone offered me coquito I thought they were going to give me a coconut macaroon but instead I got something a little stronger. 

These coconut macaroons are the perfect little dessert to get that sweet tooth craving out of the way. You can make them on Sunday and enjoy them throughout the week. I don’t know about you but I’m always craving something sweet right before bed and this is the perfect way to satisfy that craving. The only thing is that you may want to have more than one.

Coconut Macaroons

Ingredients

  • 14 oz Sweetened Coconut
  • 14 oz Condensed milk 1 Can
  • 1 tbsp Vanilla extract

Instructions

  • Pre-heat the oven to 325°F.
  • In a bowl combined the sweetened coconut, condensed milk and vanilla extract and stir.
  • Using an ice cream or cooking scooper, scoop out malls of mixture and place on a baking sheet about 1inch apart.
  • Place in the oven and cook for 15-20 minutes, until the outside is goldenbrown.
  • Enjoy!
