Those who have been following my blog from the beginning know that there are two types of foods my wife loves and those are chorizo and bread. For those of you who have just joined us, now you know. Chorizo is something that she cannot live without and a craving that can never be said no to. Thus, we (and by “we” I mean me) created this chorizo pasta recipe which I must say, she devoured in seconds. In Miami, you have tons of options of chorizo, but in New York we are limited to Goya at our local grocery store. Granted, you can probably find amazing chorizo throughout the city, but we live busy lives and can’t be traveling that far to do groceries.
How do you make Chorizo Pasta?
The first thing you are going to want to do is get your water boiling for the pasta and cook the pasta as directed by the package. To make the sauce, you are going to start off with a sofrito, the base of every Spanish dish. Sautee the onions, garlic, and pepper. While that is cooking, slice your chorizo. Once they are cooked, you are going to add your sliced chorizo and mix it in with the sofrito and cook it for about five minutes, until you see it browning. After, add your diced tomatoes, tomato sauce, and tomato paste, along with the seasoning. Stir and then bring to a boil. Once boiling, lower the heat to a medium-low, and allow it to simmer for about 10 minutes.
Your water should be boiling at this point, so add your pasta while the sauce is simmering and cook it. When your pasta is done, drain the water and mix it in with your sauce. Sprinkle some parmesan cheese and enjoy!
