This month was a special month in the Sanchez household, because our little pupperoni, Deegan, turned one year old. Some of you know, and for those who don’t, this little puppy is my life. He is my obsession and has my heart. Since losing my old dog, Buddy, about five years ago now, it took me awhile to be ready for a new dog. Buddy was my best friend and seeing him pass was one of the hardest days of my life. I remember just crying in bed, saying sorry to him a million times because he had to put him to sleep. He lived a very long and happy life, but was extremely sick in the end. For those of you who has lost a dog before you know how hard it is to say goodbye to them.
After several years, I was finally ready to get another dog. That is when Deegan came into our lives. Deegan is the cutest, funniest, and sassiest dog out there. I always joke around that we bought him in Pennsylvania but he definitely has the Cuban sassy blood in him (and not to mention he LOVES Cuban food). Just like his dad, he gets hangry when there isn’t food or water in his bowl. Occasionally he likes to demonstrate how hangry he is by lifting his mat where his bowls are and tossing it around. But since he is my son, despite what my wife says, he can do no wrong. He is an angel child in my eyes, just like how I am to my parents (I swear they always said I was).
So of course, when Deegan turned one year old, I threw him a PAWTY! And there is no such thing as a pawty without pupcakes. I did some extensive research into fruits and sweets that dogs can and cannot eat, and came up with these blueberry pupcakes with a blueberry cream cheese frosting that Deegan absolutely devoured on his birthday. Best of all, it didn’t bother his stomach at all! I know that this isn’t a Cuban recipe nor is it human food (even though technically you can eat it), but he is a huge part of my life, and figured I can share this with all of you.
So if you have a pupperoni and want to give them a nice treat, get to baking!
Ingredients
Blueberry Cupcake
- 1 cup Flour
- 1 tsp Baking soda
- 1/2 tsp Baking powder
- 2 tbsp Honey
- 4 tbsp Oil
- 1 cup Blueberries
Blueberry Cream Cheese Frosting
- 4 oz Cream Cheese
- 1 cup Blueberries
Instructions
- Preheat the oven to 350F. Place 6 liners in a muffin pan or spray the pan with cooking spray.
- In a bowl, mix the flour, baking soda, baking powder, honey, and oil together. In a measuring cup, measure out 1 cup of blueberries. Using a muddler, smash the blueberries. Combine the smashed blueberries to the bowl and stir.
- Place mixture into the cups. Bake for 10-15 minutes, until browned and when you insert a toothpick into the center it comes out clean.
- While the cupcakes are cooking in the oven, measure out another cup of blueberries. Smash the blueberries in the measuring cup. Using a strainer, strain the juice from the smashed blueberries, into a bowl. Add 4 oz of cream cheese to the bowl and stir to combine.
- Once the cupcakes are done and cooled (if you put the cream cheese frosting when it’s hot, it will melt) frost the cupcakes. Top with your dog’s favorite treat!
I feel your pain with the loss of your dog. I was sobbing when I had the vet put my cat to sleep. Georgio was dying of renal failure at 7 years old. That day was agony for me, he had lost his purr and I could tell he was suffering and it was time for me to let him go. Thirteen years and I can’t seem to find another kitty to replace him but I think about it and the joy he brought to me and our family.
