For The Love Of A Corojito

With game day fast approaching, I wanted to create a drink that encompasses my go to drinks, Corona Light and mojitos. Since everyone drinks beer during the Super Bowl, I figured when else would be the best time to concoct a drink involving beer. Everyone out there is going to be drinking it, so might as well spruce it up a bit. Anyhow, my in-laws are the ones that introduced me to Corona Lights when I started dating my wife. Ever since then it has always been stocked in our fridge.  I can always hear my suegra saying “voy a tomar una Corona Light,” with extreme emphasis on the “Light.” Since she is always on a diet, it makes her feel better that she is drinking a light a beer, instead of the regular Corona Extra. 

I combined this drink with some Bacardi and mint lives, which to me ties in the mojito aspect and the carbonation from the beer replaces the carbonization from the club soda that typically goes in a mojito. And after many trial and errors, I have decided to eliminate the simple syrup because no matter which way I tried it, sugar and beer don’t seem to go well together—well at least in this drink it doesn’t. 

Anyhow, drink up mi gente! And like my suegra always says “Salud que belleza sobra!” 

Corojito

A Corona and Mojito Combined

Ingredients

  • 4 Corona Lights
  • 6 oz Bacardi Rum
  • 1 Lime
  • 5 Branches of Mint

Instructions

  • Poor the Coronas into a pitcher.
  • Squeeze the lime into the pitcher and Poor in the Rum.
  • Smack the mint in between both hands, or crush them using a mudler, to release their aromas. Add them to the pitcher.
  • Stir with a wooden spoon or stirrer.
  • Use mint and limes to garnish individual glasses and poor the Corojito into each cup.
  • Enjoy!
