If you guys haven’t tried the egg white bites from Starbucks, stop what you are doing and go get some OR just keep reading and then make the recipe yourself (it will probably be cheaper that way)! Nilda, my wife, is the one that actually introduced me to the egg white bites and I of course had to eat them on the regular. Now you can imagine that is not financially feasible with the insane prices of Starbucks. A latte is like $5 and let’s face it, it is a cafe con leche which you can get at any ventanita in Miami for like $3 and that comes with a croqueta, pastelito, and a tostada. I think there has been studies on how much money you can save if you actually stop going to Starbucks in the morning. Anyway, for the price of the two egg white bites at Starbucks, you can basically make a dozen of them at home and it’s extremely easy to make.
Is this really a tapa?
Ok fine, I guess it’s not really one, but what makes a tapa a tapa? In my opinion, a tapa is a small finger food that can be shared at a table. These egg white muffins are small and honestly make the perfect appetizer for any home made brunches.
Are they easy to make?
Extremely! All you have to do is separate the egg whites from the egg yolk, and mix in whatever ingredients you want. After, bake them in the oven, poof! They are done.
What I love to do is to prepare the mixture the night before I am going to make them, and store it in the fridge. So the next morning all I have to do is separate them into the muffin pan and bake them in the oven.
Can I use egg yolks to make egg muffins?
Absolutely! Feel free to use the whole egg. I like to only use the egg whites to have a slightly healthier breakfast on the weekend, but if you want to incorporate the yolks go right ahead.
What ingredients can I use?
Feel free to use whatever you like to put in an omelet. You can use cheese, onions, peppers, tomatoes, etc. Anything works with these egg white muffins.
Ingredients
- 12 egg whites
- ¼ cup of fresh spinach chopped and tightly packed
- ½ cup of roasted red peppers diced
- ½ cup of colby jack cheese
- ½ tsp of salt
- ¼ tsp of black pepper
- Non-stick cooking spray
Instructions
- Preheat your oven to 375F.
- Seperate your egg whites from your yolks.
- Add to your egg whites the spinach, roasted red peppers, colby jack cheese, salt and black pepper and whisk to combine well.
- Spray a muffin pan with non-stick cooking spray. Evenly disperse the egg whites into the muffin pan.
- Place in the oven and cook for 15 minutes. Remove and serve!
