It’s summertime and the livin’s easy. Just kidding there is nothing easy about life in the middle of a pandemic. Especially during these beautiful summer days where all you want to be is outdoors and yet you are stuck inside. Well, the good thing is that these corn fritters are the perfect snack for any indoor activity or any social distancing outdoor activity. They are light, fluffy and pack a punch when it comes to flavor.
How do you make Corn Fritters?
Making corn fritters is actually pretty easy. You mix fresh corn (you can use frozen corn), flour, baking powder, salt, chili powder, paprika, eggs, milk, and green onions together. Then, cook them in the air fryer for about 8 minutes and that’s it, you are done!
What kind of corn do you have to use?
I like to use fresh corn and cut the corn off the cob. You can use frozen corn if you want, but cutting the corn off the cob is extremely easy and tastes a lot better. The way I cut the corn is by first shucking the corn. After, I hold it standing up in a bowl and run a knife down the cob. That way all the kernels fall into the bowl and you don’t have a mess to pick up afterwards. I would not use a can of corn for this. Canned corn is extremely watery and it may water down your batter.
What is this Elote sauce you speak of?
This elote sauce is everything that is on a Mexican street corn, except for the corn. This sauce only takes four ingredients and you can whip it up in a second. I combine sour cream, mayonnaise, lime, and Everything but the Elote seasoning from Trader Joes. In the city, it’s hard for me to get to Trader joes because there are only two somewhat close to my apartment, so whenever I go I make sure to stock up on two things Everything but the Elote and Everything but the Bagel.
Do I have to air fry the corn fritters?
No, you don’t. I have been using the air fryer more recently for one reason, my wife. First, she hates the olores (smell) that a deep fryer gives and seeing that we don’t have a hooded stove in our apartment, the smell lingers for a few days. Second, she has been nagging me that we have to eat healthier, so the only way she tries the Frito Friday food is if it’s air fried.
To fry them, all you have to do is coat the bottom of a large pan with oil and heat it up over medium-high heat. Once hot, add about 2-3 tablespoons of the batter (I use a cookie scooper) and put it in the oil, flattening out the batter afterwards. Cook for about 2-3 minutes on one side and then flip them to cook for another 2-3 minutes, until they are golden brown.
Ingredients
- 3 cups Corn about three ears of corn
- 1⅓ cups All purpose flour
- ½ tsp Chili powder
- ½ tsp Paprika
- 1 tsp Baking powder
- 1 tsp Salt
- 2 Eggs
- 3 tbs Butter melted
- ½ cup Milk
- ½ cup green onion
Instructions
- Cut the corn off the cob and measure out three cups.
- In a bowl, combine the flour, chili powder, paprika, salt, and baking powder. Stir to combine.
- In a separate bowl, whisk together two eggs. Add the butter, corn, and milk and mix. Slowly add the dry mixture of the flour, chili powder, paprika, salt, and baking powder, while stirring. I add about 1/3 cup at a time and stir in between. Finally add the green onions and stir.
- Preheat your air fryer to 375F. Scoop about 2-3 tbs onto the air fryer tray and slightly flatten out the mixture. Cook in the air fryer for 8 minutes.
- Dunk in the elote sauce and enjoy!

- Combine all the ingredients in a bowl and stir together! That’s it! Quick and easy.

elota sauce = amazing. i used frozen corn because i didn’t have to cut it off the cob, but I’m going to try it that way next time
