Cut the corn off the cob and measure out three cups.
In a bowl, combine the flour, chili powder, paprika, salt, and baking powder. Stir to combine.
In a separate bowl, whisk together two eggs. Add the butter, corn, and milk and mix. Slowly add the dry mixture of the flour, chili powder, paprika, salt, and baking powder, while stirring. I add about 1/3 cup at a time and stir in between. Finally add the green onions and stir.
Preheat your air fryer to 375F. Scoop about 2-3 tbs onto the air fryer tray and slightly flatten out the mixture. Cook in the air fryer for 8 minutes.
Dunk in the elote sauce and enjoy!
