Chorizo a la Sidra Recipe

Chorizo a la Sidra, aka chorizo cooked in cider, is another classic spanish tapa and it is perfect for our TAPA TUESDAY menu! For those of you who have been following this blog for the past year, know that my wife LOVES chorizo, and thankfully a lot of spanish tapas have chorizo in it. So needless to say, she loves chorizo a la sidra!

Is this tapa hard to make? 

Chorizo a la Sidra is probably one of the easiest tapas to make. The premise of this tapa is basically boiling chorizo in cider, until the cider forms a syrup.

What can I serve chorizo a la sidra with? 

This tapa goes perfect along with any item you will find on a charcuterie board. You can serve it with cheese, bread, olives, basically anything you like! I personally love to serve it with some toasted french baguette, that way you can place the chorizo right on top and dip the bread in the syrup!

How do you make chorizo a la sidra? 

Chorizo a la Sidra

To make this tapa, the first thing you are going to do is slice your chorizo into quarter inch slices. Next, you are going to heat olive oil on a pan and once hot you are going to add your chorizo. From here, cook the chorizo until they are browned on the outside and be careful not to burn them. Once browned, you are going to add your cider and bay leaf and allow the chorizo to simmer for about 10-15 minutes until the cider forms a thick syrup.

Ingredients

  • 8 oz of chorizo sliced
  • 2 tbsp of olive oil
  • 1 ½ cup of apple cider
  • 1 bay leaf

Instructions

  • Slice your chorizo into about ¼ inch slices.
  • Heat the olive oil in a pan over medium-high heat.
  • Once hot, add your chorizo and sear for about 5 minutes, browning both sides.
  • After, add your apple cider and bay leaf and bring it to a boil. Once boiling, lower the heat to medium and allow it to simmer for about 10-15 minutes, or until the cider has become a syrup like consistency.
  • Serve and enjoy!
