Slice your chorizo into about ¼ inch slices.
Heat the olive oil in a pan over medium-high heat.
Once hot, add your chorizo and sear for about 5 minutes, browning both sides.
After, add your apple cider and bay leaf and bring it to a boil. Once boiling, lower the heat to medium and allow it to simmer for about 10-15 minutes, or until the cider has become a syrup like consistency.
