I love apple pies, especially around this time of year. They make you feel like you are at home for the holidays with your family. So, it didn’t feel right to not share an apple pie empanada recipe for the blog. It was my first time ever making one of these and let me tell you that it was off the chain! They remind me a lot of an apple turnover which I love, just not as flaky and a little more crunchy. Of course I topped it off with some vanilla ice cream. I mean how else would you eat these apple pie empanadas!?!
What kind of apples do you use to fill the apple pie empanadas?
I love to use granny smith apples for most of my pies. I love the fact that they are tart and crunchy, giving you a sweet and sour taste in your recipes. Top it off with vanilla ice cream and you have the perfect combination.
To air fry or to deep fry? That is the question!
Honestly, it is completely up to you! I typically use my air fryer for these types of recipes, because I feel like it comes out just as good as deep frying and it’s less of a mess. If you are going to air fry it, I recommend using Goya’s ‘puff pastry dough for turnovers’ which gives you more of the fried texture. If you are going to deep fry them, then I would use Goya’s ‘dough for turnover pastries.’ I know they sound basically the same, but I promise you that there is a difference. You can buy both and try them out!
How to make this apple pie empanada recipe
First things first, take out your dough and allow it to thaw.
- Filling: To make your filling, peel, core, and dice your apples. Next, mix them with sugar, brown sugar, cinnamon, a pinch of nutmeg, and lemon juce.
- Assembling: Lay out your thawed dough on the counter. Place about 1-2 tablespoons of filling in each center of the pastry dough. Moisten the outer edges with water lightly. Then fold the dough in half and seal the edges with a fork.
- To cook: Preheat your air fryer to 375F. Spray the empanadas with cooking oil on both sides and cook for 12-15 minutes, until they are golden-brown. If you are going to deep fry them, heat the oil to 375F and deep fry for about 3-5 minutes, until they are golden-brown.

Ingredients
- 10 discs of Goya Puff Pastry Dough for Turnovers thawed
- 2 granny smith apples
- ½ cup of sugar
- ½ cup of light brown sugar
- 1 teaspoon cinnamon
- ⅛ teaspoon nutmeg
- 1 teaspoon lemon juice
- Spray cooking oil
Instructions
- Take out your dough and allow it to thaw.
