French Onion Soup Recipe

The good old classic french onion soup. One of my favorite soups of all time. Homey, cheesy, and loaded with sauteed onions and bread. What is there not to love! Funny story, when my wife and I went to France for the first time, we always ordered a french onion soup at each restaurant. Now, these french onion soups are delicious which would then lead us to fight over the last bite of the soup. After multiple fights and stares from other customers we just started ordering our own french onion soups. This french onion soup recipe is delicious and I will say that it holds up to the standards of those french onion soups that we had in France.

How do you make french onion soup? 

  • Prepare and sautee your onions: Peel and cut two onions in half by cutting from the root to the tip. Next, slice your onions. Then, in a big pot, melt your butter and once melted, add your onions and stir to coat each one with butter. Stir occasionally as you cook them over medium-high heat. Once your onions become soft and translucent add flour and continue to cook until they become golden brown. 
  • Cooking the soup: Once your onions have become caramelized, add your beef broth, wine, water, and spice. Stir and bring to a boil. Once boiling, lower the heat and allow the soup to simmer. This is an important step because you want all of the alcohol to cook off. 
  • Broil: Once the soup is done, place the soup in separate oven safe bowls.  french bread and gruyere cheese to the top of the soup. Preheat your broiler to high and then place your soups in the oven. Allow the cheese to melt and become brown.

What type of wine should I use in my soup? 

I love to use cabernet sauvignon in my french onion soup. Cabernets are full body wines with strong tannins which gives the soup a certain tartiness.

What is the difference between beef broth and beef stock? 

Beef broth is used by boiling the meat and seasoning while stock is typically made by boiling the bones. Beef broth is sometimes thinner in consistency but with more flavor, where stock is slightly thicker in consistency.

Ingredients

  • 2 whole large yellow onions
  • 4 tbsp of salted butter
  • 2 tbsp of all purpose flour
  • 32 oz beef broth
  • 1 cup of red wine
  • ½ cup of water
  • 1 tsp of salt
  • ¼ tsp of black pepper
  • 1 loaf of french bread
  • 12 slices gruyere cheese

Instructions

  • Once your onions have become soft and translucent, add flour and continue to cook until they become golden brown. Another 3-5 minutes.
  • Once your onions have become caramelized, add your beef broth, wine, water, salt and black pepper. Stir and bring to a boil.
  • Once boiling, lower the heat and allow the soup to simmer for 10 minutes. (This is an important step because you want all of the alcohol to cook off.)
  • Once the soup is done, place the soup in separate oven safe bowls. french bread and gruyere cheese to the top of the soup. Preheat your broiler to high and then place your soups in the oven. Allow the cheese to melt and become brown.
  • Serve and enjoy!

    such an incredibly EASY and TASTY recipe!!!! It was absolutely delicious! I doubled the recipe because I was making it for a larger group; everyone really enjoyed it. One of my guests even said “best onion soup I have had in a loooong time”!

    Overall, I would absolutely recommend making this recipe! Not going to lie, I am already looking forward to making it again in the very near future… like maybe this upcoming weekend! YUMMMM!
