Sopa de platano (plantain soup), is one of my mom’s specialties. She always makes it with ropa vieja (recipe in blog) because she uses the liquid that the beef is pressure cooked in to make the soup. I was craving it all winter and decided to make it after cooking ropa vieja a few nights ago. And what a good idea that was because it came out delicious!!
Don’t get me wrong, I have also cooked it without cooking the ropa vieja first and it comes out just as tasty!
It doesn’t take long to make maybe about 10 minutes in the pressure cooker and blending it takes seconds! It is the perfect soup to have if you are feeling under the weather. Let me know what you think in the comments below!

- Pressure cooker
- Blender
Ingredients
- 3 Green plantains
- 1 cup Onions diced
- 3 cloves Garlic diced
- 2 packs Beef flavored buillon (powdered) or two cubes of beef flavored buillon
- 1 tbs Garlic powder
- 2 tbsp Lime juice
- 1 tsp Salt
Instructions
- Peel the green plantains and chop into 1-2inch slices. Place in the pressure cooker. Fill with 8 cups of water. Add the onions, garlic, buillon, and garlic powder to the pressure cooker. Cook under pressure for 10 minutes.
- Once done, release the pressure from the pressure cooker. Scoop out all of the plantains into a blender. Add 6 cups of the broth that is left in the pressure cooker. Add the salt and lime into the blender and puree in the blender. You may add more water, if you want the soup to come out more watery. You may also add salt to taste
- Serve with a side of lime! Enjoy!
Notes
IF YOU MADE ROPA VIEJA YOU CAN USE THE WATER THAT WAS IN THE PRESSURE COOKER ONCE YOU TAKE OUT THE MEAT. THAT WATER HAS NOW BECOME A BROHT FROM THE MEAT. JUST ADD THE PLANTAINS, COOK FOR 10 MINUTES, AND THEN PLACE IN THE BLENDER USING THE LIQUID THATS IN THE PRESSURE COOKER.
