For The Love Of Guava Pancakes with Guava Syrup

Quarantine this year made Easter a little difficult since everyone has to social distance. So, to make things a little better I made some guava pancakes topped with guava syrup. And let me tell you it made being away from everyone a little easier. These pancakes came out so fluffy and delicious.  

If you are missing a few pounds to finally gain that COVID 19lb, this is the best way to do so. The guava syrup is just the perfect amount of sweetness, that makes you want to keep eating these pancakes until you can’t no more. And the best part of the syrup is that it’s good for up to a week if stored in the fridge. So, pancakes every day!!! YAY!

The key to making them is making sure you sift all the ingredients before mixing them so that the pancakes come out fluffy. After that, you just stir, pour, cook, and eat. I hope you enjoy! Let me know what you think in the comments below!

Guava Pancakes and Guava Syrup

Ingredients

  • cup All purpose flour
  • tsp Baking powder
  • 1 tlbs Sugar
  • 1 tsp Salt
  • 1 tsp Vanilla extract
  • cup Milk
  • 11 oz Guava Paste
  • 1 egg
  • 1 cup Water

Instructions

  • Dice the guava paste into small pieces. Place in a medium sauce pan and add ½ cup of water. Heat over medium-high heat till the guava is melted. Continuously stir.
  • In a bowl, sift the flour, baking powder, sugar and salt. Add the vanilla extract, milk, ⅓ a cup of the melted guava, and egg to the bowl. Using a whisk, stir till all the ingredients are combined and it is smooth.
  • Heat a lightly oiled griddle or frying pan over medium-high heat. Scoop the batter onto the griddle. Wait till you see bubbles forming on the pancake and then flip over. Brown on both sides.
  • Pour the guava syrup on top and enjoy!

Guava Syrup

  • Using the remaining melted guava, add ½ cup of water and heat over high heat to a boil. Boil for about 3-5 minutes, till it get a syrup consistency.
