I was scrolling through Instagram and saw a picture of egg rolls and if I am being honest with you, I am not a huge fan of them and never understood why people like them so much. However, I started thinking of different recipes I can use in an egg roll and thought to myself, let’s make then Cuban, DUH!
In my opinion, nothing is more Cuban than some picadillo, rice, and plantains. Which was perfect because I had some left over picadillo from earlier this week and was trying to find a reason to use it. So, I combined all these ingredients into one egg roll and the outcome was delicious. Crunchy, sweet and flavorful, all in one bite!
These Cuban egg rolls are the perfect appetizer for a party or snack during any time of the day. Seriously, serve them at your next party and your guests will be amazed!
How do you fold these cuban egg rolls?
Lay the egg roll wrapper diagonally, like a diamond with one point facing you. Place the filling in the middle of the egg roll. Roll the corner closest to you over the filling and tuck it under the filling. Fold the corners in and then continue to roll until you reach the end. Seal with a dab of water on the corner. It will have an envelope appearance.
You can definitely deep fry these bad boys, but my wife is making us eat slightly healthier, so I made them in the air fryer instead and they came out just as crispy and just as delicious. I am not too sure as to why we are eating healthier since beach season is basically cancelled with this pandemic.

Ingredients
- ½ cup Picadillo Recipe on blog
- ½ cup White rice
- 8 Sweet plantains Recipe on blog or Goya frozen plantains
- 8 sheets Egg roll wraps
- Cooking oil spray
Instructions
- Lay your egg roll wraps out on a flat surface. Place a tablespoon of picadillo in a line on the center of the wrap. Lay the white rice on top. Chop the sweet plantains into strips and lay on top of the picadillo and rice. Fold and close the egg roll.
- Pre-heat your air fryer to 400°F. Meanwhile, lay your egg rolls on the pan and spray with oil.
- Once the air fryer is preheated, add the egg rolls, and cook for 10 minutes, turning half-way.
- Remove when done and enjoy!
