These vaca frita tostones are inspired by my favorite Cuban fusion restaurant in Miami, FINKA Table & Tap. It’s always one of my go to restaurants whenever I visit South Florida because their food is just so damn good! From their croqueta pizza, to their Cuban old fashion there is nothing on the menu that won’t make your mouth water.
I decided to add some corn, red onions, and a garlic cilantro aioli to my recipe to give them some extra flavor and an extra crunch and believe me when I tell you that they are to die for.
Are Vaca Frita Tostones hard to make?
I typically make these after I make vaca frita for dinner and have leftovers. So, vaca frita tostones are the perfect dish to make with them. I cook the tostones in the air fryer which only takes a few minutes. I add my garlic cilantro aioli to the base of the tostones, top it off with the vaca frita, and finally I make a mix of corn, red onions, and my garlic cilantro aioli for the topping. It only takes seconds to actually make them.
How many plantains do I need?
One green plantain should give you about four tostones and this recipe makes 12, so you would need about three large green plantains. Sometimes at the grocery store they may only have small plantains so you may need to buy an extra one.
Is this a good appetizer for a party?
Ummm, HELL YES! Your guests will love them and keep asking for more! You can always make vaca frita for dinner and set aside some to make these before your guests arrive.

Ingredients
- 2 cups Vaca Frita Recipe found on the blog
- 3 Green Plantains
- 1 cup Garlic cilantro aioli Recipe found on the blog
- 1 cup Corn
- ½ cup Red onions
Instructions
Air fryed tostones
- Cut the ends of the plantains using a knife. Make three long cuts through the skin from the top to the bottom of the plantain on three different sides. Peel each slit off.
- Cut the plantain in chunks about 1-2 inches thick.
- Heat up your air fryer to 375F.
- Spray the plantains with oil and place them in the air fryer for 7 minutes.
- Remove the plantains after 7 minutes and using a tostonera, or any flat object, smash the plantain flat, to about ¼ of an inch thick.
- Place the smashed plantain back into the air fryer again at 375 for 5 minutes, flipping them halfway.
Corn, Red onion, garlic-cilantro aioli topping
- Drain the liquid from the can of corn and measure out 1 cup of corn. Combine the corn with ½ a cup of redio onions and 1 tlbs of the garlic aioli. Stir to combine.
How to build the Vaca Frita Tostone
- Place about one tablespoon of garlic cilantro aioli on the tostone. Add about 2 tabples spoons of the vaca frita. Top with a teaspoon of the corn, onion, and garlic cilantro aioli mixture.

I love vaca frita! And I’ve tried the vaca frita tostones at FINKA (and love). So I had to try these! And they were fricken amazing. That garlic cilantro aioli sauce is YUM 😱. Honestly I was so hungry I forgot to do the corn/red onion on top- will try next time because I will definitely be making these again!
