No Fuss Chimi Rubbed Steak Tacos 

Since moving back from New York and getting a grill, one of my go to meals is one of my all time favorites… Churrasco! So when La Lechonera reached out to me to try one of their new rubs, the Chimi Rub, I couldn’t say no! But instead of making just plain old churrasco, I spiced it up and made it into steak tacos, because who doesn’t like tacos?! Now, I am going to be honest, I was never too familiar with rubs until recently, and let me tell you they are probably the easiest way to season any meat. Long gone are the days of seasoning with spices and then letting them sit in a marinade to soak up flavor. Now, it’s all about the rubs in this household.

What is so good about this Chimi Rub? 

I don’t know how La Lechonera did it, but they did it. They legit turned chimichurri into a rub. It’s extremely flavorful and has the perfect balance of mixed spices to make any food taste like it is being marinated in chimichurri. 

What are the pro’s to using a rub? 

Rubs are great not only because they are easy to use but they are the perfect seasoning to those who are inexperienced in cooking. They work on any type of meat such as beef, lamb, chicken, pork, turkey, or seafood. While your choice of meat is cooking, rubs allow juiciness of the meat to be sealed in, creating a crusty outer barrier giving your meat not only flavor but texture. Finally, unlike marinades you don’t have to wait for the meat to get flavor, you can cook the meat right away. There is no waiting period, which is great for those of us who need to whip up a quick meal!

Ingredients

  • 1.5 lbs of churrasco
  • Chimi Rub by La Lechonera
  • ½ red onion
  • Queso Fresco
  • Cilantro
  • Taco shells

Instructions

  • Generously season your churrasco with the Chimi rub and make sure to rub it in on both sides.
  • Heat up your grill and once hot, place the churrasco over medium-high heat.
  • Cook the meat on each side for 4 minutes.
  • Once done, take the churrasco off the grill and allow it to sit for a couple minutes before slicing it into strips or cubes.
  • Heat up your taco shells and place your churrasco inside and top it with red onions, queso fresco, and cilantro. Enjoy!!
