Due to this pandemic, a lot of restaurants in the Upper East Side have been closed. Lately I have been craving a Cuban fusion dish and I typically order take out once a week but since I am not able to today I decided to make Cuban arroz frito, aka Cuban fried rice.
Growing up, my mom used to make Cuban fried rice for our family gatherings, but I decided to add a few more twists and flavors to this recipe. The sweet plantains, plus the soy sauce gives the rice the perfect combination of sweet and salty. To top it off, the Chifles plantain sticks on top gives it a nice crunch.

Ingredients
- 3 Eggs
- 1 lb Thinly sliced chicken
- 1 tbs Sazon Completo
- 1 cup Onions diced
- 4 cloves Garlic diced
- 1/2 cup Tomato chopped
- 1/3 lb Ham chopped
- 5 cup White rice
- 1/3 cup Scallions chopped
- 1½ cup Sweet plantains chopped
- 1/2 tsp Black pepper
- 2 tbs Salted butter
- 1 tsp sea salt
- 1/4 cup Soy sauce
- Oil
- Chifles plantain strips
Instructions
- In a rice cooker, add three cups of rice to cook. (I use the rice cups that come with the rice cooker. I add three cups of dry rice, and then place four cups of water. Add a tsp of oil and ½ tsp of salt. Turn on the rice cooker).
- While the rice is cooking, crack 3 eggs in a bowl and scramble. Cut the chicken in half and then into strips. Season with the chicken with sazon completo.
- In a large pot, coat the bottom with light oil. Heat the oil over medium heat and once hot, add the scrambled eggs and cook through for about3-5 minutes. Remove the eggs from the pot and set aside.
- Increase the heat to high and coat the bottom of the pot with oil. Once hot, add the chicken and cook through for about 10 minutes.Remove once cooked.
- Add the diced onions and garlic to the pot and cook for about five minutes. After, add the tomatoes and cook for another five minutes until the tomatoes start to become soft.
- Add the ham and cook for about one minute. Add the rice, scallions, chicken, sweet plantains, and scrambled eggs. Stir to combine. Cook for about 5 minutes.
- Then, add the soy sauce, black pepper, and butter and stir. Cook for about 15-20 minutes until the rice starts to become slightly crispy. Add salt to taste.
- Serve in a bowl and top with Chifles plantain strips. Enjoy!
