It is Taco Tuesday again and you HAVE to try these chimichurri skirt steak tacos with roasted cherry tomatoes and red onions. Tacos are a huge part of our diet in this household and we religiously practice Taco Tuesday.
Typically, we load these babies up with everything imaginable, but I wanted to create something lighter and more refreshing, but with a whole lot of flavor. Naturally, I turned to my chimichurri sauce. Personally, I love chimichurri on about anything and the best thing about it is how easy it is to make. You throw all the ingredients in a food processor, pulse it a few times, and done! Honestly, this is what I love about tacos; you can literally place anything under the sun in them and they will always taste amazing. I don’t think there are any rules in what you can and can’t put. As long as you pair it with a nice cold beer or a fresh margarita, you got yourself a party in your mouth!
How to make chimichurri skirt steak tacos
The first thing you have to do is make your chimichurri sauce, which the recipe can be found on my blog. You then season the steaks with salt and pepper, and after pour the homemade chimichurri sauce on them allow them to marinate. The longer they are marinating the better. The best part about this is that I made the skirt steaks in my air fryer which took only a matter of minutes to cook. While the steaks are cooking in the air fryer, quickly sauté your cherry tomatoes and red onions. Warm up the tortillas at the same time. Once everything is done, cut the steaks into strips, place them on the tortillas and top them with the cherry tomatoes, red onions and some more chimichurri sauce.

Ingredients
- 1 ½ lb Skirt steak
- ½ cup Chimichurri recipe in blog
- 1 cup Cherry Tomatoes
- 1 Red onion
- Salt
- Black Pepper
Instructions
- First, prepare your chimichurri sauce (recipe in blog). After, season the skirt steaks with salt and pepper. Place them in a bowl and pour the chimichurri sauce on them, coating the skirt steaks with the sauce. Save some chimichurri to dress the tacos later. Allow to marinate (the longer the better).
- Heat your air fryer to 375F and then place the skirt steaks inside for about 8-10 minutes, flipping half-way. (If you want it rare allow it to cook for about 8 minutes, if you want it medium-well, go for 10).
- While the steaks are in the air fryer, heat a pan over medium-high heat. When hot, add the cherry tomatoes and red onions and sauté for about 5 minutes, until the tomatoes start to wrinkle, and the onions become soft. During this time, heat up your tortillas as directed.
- Once the steak is done, remove and cut into slices. Build your tacos by placing the sliced steak first and dressing it with the sautéed cherry tomatoes, red onions, and the remaining chimichurri sauce.
