Pre-heat oven to 350F.
In the meantime, cut your tomatoes into quarter size pieces and grate on a food grater over a medium size bowl.
Grate the garlic cloves into the bowl.
Add 1 tsp of salt to the bowl and mix to combine.
Slice the bread in half and place on a baking tray.
Let the bread toast in the oven for 5 minutes.
Remove the bread and drizzle olive oil on it.
Spread the tomato purée over the bread.
Sprinkle with salt and fresh parsley to your liking and ENJOY!
