Tostada Cubana Preparada

Ingredients

  • loaf Cuban bread
  • 2 Eggs
  • 5 slices Bacon
  • 2 Avocados
  • ½ tsp Salt
  • 1 Lime juiced
  • ¼ tsp Black Pepper
  • Butter
  • Oil

Instructions

  • Preheat oven to 400F. Line a baking sheet with aluminum foil. Lay the strips of bacon onto the baking sheet and cook for about 15 minutes, until they are crispy.
  • Meanwhile, peel and pit your avocados, and smash them in a bowl using a fork. Add the lime, salt and pepper and mix to combine. Set aside. 
  • After, generously coat a pan with oil and heat over low-medium heat. Place one egg at time into the pan. Let cook for about 1 minute, and then place a cover on the pan and let it cook for another minute or two until all the white area of the eggs are cooked, and the yolk is still runny. Remove and place on a paper towel lined plate. 
  • Then, to make the tostada. Slice a piece of Cuban bread in half and coat the outside and inside of the slices with butter. Place in a sandwich press for about 3-5 minutes, until the bread is flattened, crispy and the butter is melted. 
  • Finally, start stacking your tostada preparada. First, spread out the avocado smash, then place the bacon on top and finally the egg. Sprinkle with salt and pepper to taste and enjoy!
