Queso Fundido Recipe 

Queso fundido is one of those delicious appetizers that when it’s on the menu you just have to order it. I mean who doesn’t love a plate filled with melted gooey cheese with a little bit of chorizo and some fresh salsa right on top. It’s one of those appetizers that is on the same level as my spinach artichoke dip. The best thing about it is that it’s so easy to make you really don’t have to go to any restaurant to have it!

What cheese should I use to make queso fundido?

The main thing is that the cheese should be a shredded cheese or a cheese that is easily shreddable. This allows it to melt evenly once you place it in the oven. I prefer cheeses with a little bit of a kick to them to add some extra spice to the dish. For example, monterey jack or a mexican blend of cheese. For this recipe I use monterey jack but feel free to switch it up as you like. The best part of cooking is that you don’t always have to follow the recipe to the ‘t’ and can add your own twists and flavors to them.

How do you make this queso fundido recipe?

Cook your chorizo: Dice your onions and garlic and saute them in a pan over medium-high heat for about 3-5 minutes. Once cooked, add your chorizo and cook for 5-7 minutes, breaking it apart as you stir. Take off the heat once the chorizo is fully cooked. 

Bake the queso fundido: Preheat your oven to 350F.  In an oven safe dish or cast iron, place half of your cheese on the bottom of the dish. Next add a layer of your cooked chorizo. Finally, top it off with the remainder of the cheese and cook in the oven for 20 minutes, until the cheese is melted and slightly browned on top.

Assemble and serve: Once out of the oven, you are going to top off the queso fundido with the remaining cooked chorizo and some fresh pico de gallo to give it that hint of freshness and lightness. Serve with either tostito chips or bread and enjoy!

Ingredients

  • ½ cup of onion diced
  • 3 garlic cloves diced
  • 8 oz of chorizo
  • 4 cups of monterey jack cheese/stringy cheese
  • 1/2 cup of pico de gallo
  • Cilantro

Instructions

  • Preheat your oven to 350F.
  • Add two tablespoons of oil to a medium skillet and heat over medium-high heat.
  • Once hot, add your diced onions and garlic and saute them in a pan for about 3-5 minutes.
  • Once cooked, add your chorizo and cook for 5-7 minutes, breaking it apart as you stir. Take off the heat once the chorizo is fully cooked.
  • In an oven safe dish or cast iron, place half of your cheese (2 cups) on the bottom of the dish. Next, add a layer of your cooked chorizo. Finally, top it off with the remainder of the cheese and cook in the oven for 20-30 minutes, until the cheese is melted and slightly browned on top.
  • Once out of the oven, top off the queso fundido with the remaining cooked chorizo, some fresh pico de gallo and cilantro.
  • Serve with either tostito chips or bread and enjoy!
